Grilled Lamb Rack with Massaman Curry Sauce

  • Coconut milk1 cup

    Massaman Curry Paste
    2 tbsp
  • Carrot, sliced lengthwisehalf
  • Zucchini, sliced lengthwisehalf
  • Eggplant, sliced lengthwisehalf
  • Garlic, chopped1 tbsp
  • Rosemary3-4 twigs
  • Olive oil2 tsp
  • Fish sauce1/4 tsp
  • Salt1/4 tsp
  • Black pepper, ground1/4 tsp


  • Marinate lamb, carrot, zucchini, eggplant with salt,
    pepper, garlic, rosemary and olive oil
  • Make the sauce by heating 2 tbsp of coconut milk in
    sauce pot, add curry paste and cook until fragrant.
  • Add the rest of coconut milk, season with fish sauce
    then simmer until reduced.
  • Grill the lamb and vegetable and serve immediately
    with sauce.
